La obra está estructurada en seis bloques temáticos para facilitar el estudio de los mismos. La primera parte se centra en las operaciones de preservicio, es decir, en la preparación del material y de los equipos y mobiliario, y en la puesta a punto de la sala. La segunda parte presenta el servicio de alimento y bebidas, abordando las técnicas y tipos de servicio. En la tercera parte se recogen los servicios especiales, como pueden ser la organización y servicio de banquetes, las nuevas fórmulas de restauración (catering, buffet, self-service, free-flow, fast-food, drug-store, take away, vending), las técnicas de racionado, trinchado, pelado y desespinado, y la elaboración de platos a la vista del cliente. A continuación se detallan las operaciones de postservicio y la documentación asociada al servicio en las partes cuarta y quinta, respectivamente. Finalmente, en la sexta parte se abordan las estructuras organizativas.
